theres an old lady that comes to the shop I work at and I thought of her instantly wen I saw this..now she is a very sweet old lady but gets mad when I heat her "au lait"*** to 170 instead of some insane number like 185 or something!!!sometimes I try to sneak the 165 but her shakes her head and tells me its not hot enough and to make it hotter next time..it makes me sad because I've told her a couple of times you know milk is VERY burt by 180 degrees and smells and taste like burnt baby formula..to make it sound gross....
then sometimes Im lucky enough to have a coworker nudge me and say "she likes mine!!"... he is very stubborn in his ways like her.
(***which is actually a quarter of an inch, if that, of brewed coffee and the rest milk....thats the way she likes it....)
so addition to their heat resistant mouth they have no taste buds either.

There's a lady that comes into my current place of work (not worth mentioning) who wants me to put her coffee (which is already brewed way to hot) in the microwave until it's boiling, and let it boil for a while... I could barely carry it out to her it was so hot, and then she just started sipping it. What??? I think old ladies have some sort of ridiculous protective skin in their mouths... I don't understand.
if people want 200 degree lattes, and they are paying $4 something for them, i say let them have it.
i just let them know that is not at all what we recommend, 150 is what we typically do, and anything above that will significantly alter the taste of the drink (in a negative way imho). for the love of god i don't know WHY people order this, it smells horrid and i imagine it must taste as bad if not worse, but i want the customer to be happy.
Well if a customer asks for it to be "extra hot" I tell them my normal is getting the milk in the 140s. 150 is the MAX I usually let it coast to. If they want it much hotter than that I tell them that is getting close to scalding and usually they care less. BUT it's their money and it's what they want..... Later!
Sure, educate your customers, but not at their expense. It's their four bucks, you should give 'em what they want for their money, or give 'em what you want on your dime.
Make them what you consider a hot latte, and tell 'em that you'd like them to taste that one, on you, while you pull their extra hot one. Once you're done with the 'extra-extra-hot', have them compare yours to theirs.

If they like yours better, you've done a good thing.

If they still like theirs better, you have a coupla choices: Shut the heck up and make them what they want for their $3.95, a cafe is a service industry participant after all, or tell them that you're not going to serve them what they want, and they should probably take their patronage elsewhere.

But ferchrissakes, don't cry about it...
hahaha. Well said! Nothing like a little carbon in a 200 degree cup of questionable milk to start the day..

I do appreciate SBux for introducing the masses to the latte and other products, but I can also appreciate a bit of SBux humor.

If a friend asked me at my home (since I have no experience working at a shop yet) to make them a an extra hot latte, I'd explain that it would complete destroy the finely-tuned flavor of the drink before having them sign a disclaimer stating that if they burned themselves, they must hold their sub-par taste in coffee accountable instead of me.

I work at sbux. We get the 200 every now and then, I just look at them and shake my head. Hell, they are coming to sbux - they obviously don't care about what they are drinking.
I put up with it. Most customers are used to getting whatever they want, however they want. I never take it to 200 (yikes!) but instead reaffirm through verbally saying that it is extra hot and that is usually sufficient enough to convince the customer that they are receiving what they're asking for.
Wow... this thread is still alive? Guess I'm kind of to blame now aren't I...

yes sir, especially during rush hour.
apparently your taste budds die at about 165. Theres nothing worse than a burnt tongue.
I usally smile at them and think "If they want hot I'll show them HOT!"
The reason I order my drinks "extra hot" isnt that I want a drink to be scaled. I'm used to every shop I goto having Starbucks temperatures (well below 140) I cant stand getting a cappuccino or latte thats 120 & 130 degrees (and it happens alot to me) so I always order them extra hot now (although I usually add to it the temp I want it to be so they know) I used to have a customer come in & order a caffe latte extra foam scalded. Yeah. Of course when you scald milk, you lose the foam so to make her drinks I had to heat 2 batches of milk. 1 for the scalded milk (hate that smell) and the other for the "extra foam" which she wanted piled high. Yeah, makes no sense to me either. And this woman would proceed to gulp down this 180+ degree drink without even flinching. Steam would be coming out of her ears!

Exactly, Mitch.
I've requested "extra hot" at the coffee shop across from work. And by "extra hot" I mean, "please make sure it's well over 100." I shouldn't be able to guzzle a latte that was just handed to me. Nothing like taking mediocre/crappy espresso and making it worse by serving it cold...
