Mine at the moment is the old favourite Yirgacheffe. Better than Bali methinks. However Bali indonesian is very smooth. Yirg' better though... I love to hear comments from the united Barista community on that?

I cupped an Etho. Amaro Gayo, today, from Cincinnati Coffee Emporium that blew me away. I've been stressing about the Ethiopia crops all year, as it's what I look forward to this time of year —Harar lot 30 broke my heart this time out.

Makes me seriously consider buying a Behmor 1600 and stockpiling greens. lol

Guatemala. I don't know what it is about it, but it has a nice chocolaty buttery-smooth feel, but without a dirty finish. The body is perfect and the acidity is surprisingly bright. Any answers as to why?

Ten days ago I had an extraordinary chance to cup Panama Geisha (Gesha Varietal) "cup of excellence". It was cinnamon colour roasted coffee, beautiful citrus aroma, clean and round taste of honey, lemon, sweet orange with pineapple tones ... best coffee ever tasted!!!
I remember that coffee we, that was the first year we opened our roastery, amazing stuff I sometimes wish you could save coffees like wines. But really that's kind of what makes it cool you have to enjoy it in the moment.

Right now it has to be Aida's Grand Reserve. Bought from sweet marias and home roasted, best coffee I've ever roasted and probably the best I've ever drank. I enjoyed the deep complexity this coffee carries much more so than the bright "tea like" Geisha.
I have been hooked on Ethiopia Amaro Gayo for a couple of months now. The berry flavors explode in the very first sip. I was skeptical when I ordered it but it blew us away from the first sip. I just ordered another 5 pounds from Matts Coffee in Maine ( www.mattscoffee.com). He had the best price I could find which is about $15 cheaper than than Klatch. He uses firewood to roast and the quality of the roast was extraordinary. In fact it had a much fuller and smoother flavor than Klatch. I am looking forward to trying some to the ones mentioned on this forum as well.
