I just dig coffee. I've roasted professionally, roasted at home, sourced and purchase green coffee, designed blends, pulled barista shifts, trained baristas, repaired and installed machines, consulted on business plans and shop layouts and various other not as glamourous coffee gigs.

Herkimer Coffee is a community based coffee shop in the Phinney Ridge neighborhood of Seattle, Wa. Our focus is on the highest quality coffee experience possible. We provide wholesale coffee and training to several shops around the country as well.

Texture: mainly clean, juicy, light powder on finish

Flavor Profile: juicy tropical fruit, peach and guava, even tomato jam.  The acid is high and sweet, no hint of tartness, giving it a long mouth-watering finish.  A spicy cinnamon and cayenne pepper mixes into the mid-tone fruits and lingers with a light powder feeling on the finish.

The new digs are coming along slowly, but building. I thought there was a cupping of some really good Latin American coffees last week. Could be wrong. Wished I could have been there to hang out with ya.

Maybe I'll get to see you this coming week I have a new barista that I am working with and am showing her the hotspots too.
