As a professional Barista and co-owner owner with my wife, of two espresso bars, I have been behind the bar every day for 8 years hand-crafting espresso drinks and brewing Specialty Coffee to SCAA standards.
We roast by-hand on a drum roaster in the artisan tradition. This means that we roast using only senses and experience, not electronic controllers, to manage the environment in the drum or to end the roasting process. Coffee origins are like wine grape origins, and we roast to preserve the “terroir” and complexity with a lighter roasting style. To monitor the quality of our coffees, we cup our production every day. In addition to a quality check, cupping keeps us connected to each origin and the subtle changes that can occur within green coffee on a lot-to-lot basis. This allows us to make the small, on-going changes to the roast profile that insure that every pound of coffee that we sell is our best effort. Sustainability of the worlds coffee supply is a driving factor when we buy green coffee. The majority of our offerings are Organic, Direct Trade or Ethically Traded. This year we formed a partnership with Liga Masiva to launch a Direct Trade coffee and “Cafe Liga Masiva” was born. By buying Cafe Liga Masiva you can be assured that the 34 farm families that work so hard to produce this great coffee are compensated fairly.

About My Company:
Founded in 2000 as an equipment supplier and training company, we began our retail operations by opening Laveggio Espresso Bar, (our original location) and then added Laveggio Roasteria, a 2000 sq ft European design coffeehouse in downtown Binghamton that houses our roasting operation and second espresso bar. Our company has been and always will be driven by absolute quality.
What is your favorite thing about the coffee industry?
the great friendships that I've formed and the complexity of the craft of artisan roasting.
