Oh wow, that's practically what I did when chemex was brought into the store: -only in house -$7 charge
-served with 8oz mugs
-served from 1-4 people, which 4 people off one 7 dollar pot is a good deal
-made with a different type of bean than what we were serving from the airpots to customers on the run
-prepped behind the bar, but would pour the water over the grounds infront of the customers
Personally, chemex is atop my list for brewing because it's quick, easy, and hella clean.
Sometimes, later in the day (typically night shift), if some "coffee people" came in...or regulars were around and I knew they actually cared about true coffee knowledge...I would make a french press, chemex, maybe siphon, and some brew from the airpots (all made with the same bean)so that they could make comparisons and taste the difference.
Was a lot of fun to show and explain the various brew methods and what they did to the beverage.
People then realized that whichever method they enjoyed the most was available at anytime, so in return we had more $7 and up transactions.
