Hey guys. At the shop I work for, we currently brew our coffee by-the-cup on a v60 pourover bar. We've recently been using French press more as well,especially on busy mornings via press-pot to air-pot, or starting a few presses if we have large groups that all want coffee.
We recently just ordered chemexes and want to utilize them into our menu. Since we already do v60 pourovers by the cup for people, and also offer French presses (we sometimes serve a small group a personal french press as well), I'm debating ideas on how to serve our chemex coffee.
I'm thinking maybe offer it as a 2-3 person personal pot if they're staying in and drinking coffee (as a seperate item on menu, ie "30oz Chemex for table - $7" or something). Maybe they each get 8oz cups and can refill as they desire. Any other ideas on how to incorporate them into our menu as seperate from the v60 or French press coffee? Thanks!

Oh wow, that's practically what I did when chemex was brought into the store:
-only in house
-$7 charge
-served with 8oz mugs
-served from 1-4 people, which 4 people off one 7 dollar pot is a good deal
-made with a different type of bean than what we were serving from the airpots to customers on the run
-prepped behind the bar, but would pour the water over the grounds infront of the customers

Personally, chemex is atop my list for brewing because it's quick, easy, and hella clean.

Sometimes, later in the day (typically night shift), if some "coffee people" came in...or regulars were around and I knew they actually cared about true coffee knowledge...I would make a french press, chemex, maybe siphon, and some brew from the airpots (all made with the same bean)so that they could make comparisons and taste the difference.

Was a lot of fun to show and explain the various brew methods and what they did to the beverage.
People then realized that whichever method they enjoyed the most was available at anytime, so in return we had more $7 and up transactions.
Good ideas. I'm thinking having a "coffee for 2-4" menu item, which they can choose chemex or press pot. Explain to them that chemex is a cleaner, more mild coffee and press is more full-bodied and intense. Each group gets their own personal pot. I really think people will like the quality, service, visual appeal, and personal aspect of it all.
