There is a small company in Bend, Or called My Chai, inc. Makes some of the best chai and definitely the best syrups, cocoa, and chocolate sauce.
Check them out.
Some great ideas for makin your own. Try checking out distributors where you're at and ask for samples. They might have something for coffee drinks and recommend something else for frapps and smoothies. Plus I'm sure they can deliver it to you when you need it asap or pick it up from them. Otherwise, check out some of the advertisers on this site too. But try an array of stuff, you might find that you'll want syrups from more than one company.
I thought you wanted coffee flavored syrup at first. Toddy is a cold brew coffee maker.

To make vanilla syrup. Make simple syrup (equal parts sugar and hot water, stir to combine). Add vanilla paste to taste. You don't need a lot of it at all.
For something else you can check out CE Organics syrups that are made with agave for a sweetener.

Myself I would like to figure some more good home recipes.

That's really it. Boiling water and sugar for simple syrup. Make sure you use a filtered water. For best life span, you ought to boil the whole mess for a minute or two, but if you use it quickly enough this shouldn't be an issue.

(On a side note, if you are at all into cocktails, you ought to have a bottle of simple syrup at home too. It's a super-flexible ingredient - just add lemon and orange juice for sour mix, lime juice for daquiris and kamakazis, etc...)

If you want to do other flavors, you could probably steep ingredients in the hot syrup. I haven't played with that at all though. Anyone done this yet? I imagine a cinnamon would work really well.

To make a chocolate sauce, you can add chocolate or cocoa powder and more sugar (to taste) to the boiling hot liquid and stir till smooth. This will need refrigeration.

The best plan is to experiment. Start with some of the ideas here, perhaps also a bottle of Monin or other for reference, and try some stuff. Always take good notes though, so that you can reproduce your results.

When making your own extract or even using a store bought extract to make syrups do you need to boil the extract with the simple syrup to cook off the alcohol before serving?
Torani had some Bacon flavored syrup on the Caffe Culture, it's on the top of my things to buy list.
