Unless its water (or possibly beer) you don't need 20 ounces of anything...especially when it contains a full mornings worth of lactate from another animal.

When it comes to steamed milk, I agree! Extra Hot should be illegal! And, if a customer wants a 20oz latte, why not serve it?

I worked at a place where we seriously called a "skim, extra hot, no foam, to go" (not the 1/2 caf part, tho) a "soccer mom latte..." (only between staff members). But when calling out the order if the customer was paying attention they might be able to hear a "16 soccer mom." =)

As for the extra hot requests and no foam requests... screw it man. People just don't care, that's what we have to realize. If you don't screw up your coffee the way they want you to screw it up then they'll have someone else screw up their coffee for them. I for one, would rather them pay me $5 to make them something gross then pay someone else $5 to make them something gross. Now, of course, I would rather just not make them something gross period, and in a perfect world everyone's biggest drink is a capp or something like that, but... yeah... you know where that's headed...

I've worked in shops where we would straight out deny a no foam request to the customers face, if they asked for extra hot we'd take it to 170(ish) and tell them that was all the more we'd go because we were killing the sweetness. People were usually confused, frustrated and we rarely saw them again. It was awesome to only make coffee the way I wanted to, but now, looking back I realize how foolish that setup was.

Cool customers wouldn't seem like such a relief if it wasn't for the people that make you roll your eyes and run for the back upon seeing their car waiting to turn into parking. =)

Just wondering how many of you like your steaks rare, med, well done most if not all chef hate the idea of well done but you would never be told you can't have it that way. Some people are just different as long as your quality does not go down for the ones that want the traditional whats the problem. By the way i dislike beer any size but will drink a 20 oz cup of sumartran any day
My Steaks Rare, my spro 2 down the hole. I say let the fat american get fatter, what do you guys care ouu just being crybaby's about having to make a coffee drink. It's our job people. Just do it Take the Fatties dollar tip and go about your own healthy way. We dont have to drink em' and we dont.
In this financial climate and with the moaning I hear about wanting larger sizes...it is hard to deny the 20-24 oz drinkers. However, our shop still only serves 12/16. When folks ask for extra hot or no foam , I see it as an opportunity to educate the customer. They only know that the drink they got somewhere else was lukewarm and filled halfway to the brim with big ole chewy bubbles. They were trained and now they need to be retrained to better coffee. If you serve them something undeniable better than anything they had before without snark and without a pithy, imperious attitude, they will come back and that is how we'll stay in business ;)

Kimmy, I think that is the way to go for those coffee shops committed to serve better coffee. Consumers get used to what ever you serve, and if you take the time to explain why this coffee is served like that, they appreciate it and come back. Still there may be the ones that don't care, and for sure you will have to serve it however they want, but at least they will know why or next time they will name it a proper name.
I apologize for any offensive comments I mean merely the super size me attitude I see here in the Midwest. Also in this market some shops simply cannot just cut out a high priced menu item just to fit thier own geeky lifestyle (I wish I could). Plus through proper education, I've seen so many of our customers at black sheep converted to drinking what we would call good coffee. We as a community need to remember that not everyone like SO spro.
