My husband found this article about lighting plans:
http://www.americanlightingassoc.com/info_lighting6.php
But when he started plotting it out on the floor plan it looked like overkill.
What is the lighting like in your shop? What sort of mix of pot, can or puck lights in the ceiling mixed with hanging lights, vs other lights do you use?
What is your "candle lumens"? What is your layout like?

We had all this planned out for our other location that we were going to build from the ground up but now that we are going to start smaller and renovate the location next door... we are back in square one.

Denise - that website link seems to be geared for in-home lighting, not commercial lighting. In my county the health department specifies the amount of lighting required in all work areas (not customer areas.)

Also, I suggest determining what each area of your cafe will be used for, ie: Reading/chatting, laptop computers, menu board, counter, condiment bar and designing the lighting for the type of use. You may also want some "general" lighting that can be used only when cleaning.

One more suggestion... check with your local Power Company. They often have programs to help you design your lighting, and be more green and efficient. They may even offer rebates!
