He says can you make it, I said yes, it sounds like cardboard to me, but I can make it......

At least he didn't ask for a large.

I'm fascinated by these requests. Once open I'm definitely going to attempt to get to the root of them. Asking the customer, "Tell me what it is you like about the extra dry capp, so I can be sure to get it right." Will help eventually lead to, "Let me make it for you a little differently and let's see if you like it."
Im a girl who has had a customer ask for a 20oz extra dry cappuccino. And on top of that he wanted it with hazelnut.
This was a very intimidating day because it was like my second day on bar. He would come up onto the step to see what I was doing and telling me that I was doing it wrong. Trying to come and show me how to make this drink.
I was about to freak (wouldn't you?) So I go and get one of the girls who was the main barista in the cafe to make the drink. After she had made this "thing" the customer still wasn't satisfied. He said angrily "Thanks for the Latte"

I was so upset that day. And when ever I think about it I get upset again. Yah that wasn't a good day
I try to keep things simple. We have a 6z cappuccino - and that's it. Want a larger cappuccino? You can have a latte. No ands, ifs or buts about it.

I have a regular customer who comes in about three times a week for her skim, extra dry cappuccino. I use skim and make it the same way I do for everyone else. She loves it and comes back for more. I don't bother to tell her differently since she's happy with the way we make it for her.
I am feeling better today. I had a kid come from southern Indiana, because he had read about me on Coffee Geek. He had two double espressos and was very happy. He made me happy.

Last week I did have a couple of guys come in from finding me on espresso map. They were in Indy for the motercycle race. They made me happy too, a double espresso and a traditional capp. One of them used to work at Murkey.
I love and respect anyone who protects the cappuccino....bravo! I'm with you, anything bigger than a 6 oz cappuccino is a latte!! :-)

I think of a capp as a size and proportion. For me anything over 6oz is a latte, but its not always appropriate or in everyones best interest to explain that. The industry is what it is. Might as well make the best of it. Things are always in a state of transition and who knows what the future of the industry might bring. Perhaps everyone will start drinking Espresso, Capps and S.O. Drip and demand porcelain so they can enjoy it in house.

We serve traditional Macchiato's here at Etcetera, but a large corp near here does a caramel/vanilla latte that they call a macchiato. We have to explain nearly everyday that we serve a shot pulled through the foam....
I have customer who (in addition to being a horribly deplorable human being) always wants a large, nonfat, extra hot, extra dry cappuccino with 2 Splendas. My boss has been making this drink for her for the last 4 years, and when I got on bar I decided to make it my way and see if she sent it back. I made her a nonfat cappuccino with the most beautiful microfoam I could muster out of nonfat, and I tried to make it a little hotter than usual, but not "extra hot." It was heavier than anything my boss had ever made for her, and certainly nowhere near the American Restaurant Capp. She says I make her drink the best. :)
