So does anyone have a good method of making toddys without the plastic toddy container? I don't have room in our fridge for that method.

you mean with the plastic container that sits on top of the carafe? i just let that sit on the counter overnight and don't bother with the fridge until it's all done; then you only have to worry about finding room for the carafe, not the whole setup.
I just went to Home Depot and bought two food grade 5 gallon buckets. I soak the coffee in one for 12 hours and then strain into the other bucket. Then I dilute it down and pour into half gallon containers to store in fridge easier.
