Please tell me what is the best time to make coffee/espresso/ after roasting process?

roasted coffee gives out CO2. From what I understood, at least a day after roasting, most beans peak between 2 ~6 days.
My 2 cents.
It's too fresh (in my mind) up to the 72 hour mark post-roast...USUALLY!!! I'd say days 3-8 depending on the coffee. I've had a lot of African's that are best days 6-9. It's such a volatile thing, and of course proper storage of the coffee must be taken into account.
Best response: Cup it or brew it every day to see how it develops over maybe 12-14 days and take notes on that particular coffee and how it changes. You'll be surprised, I think

Good advice, Daniel, but all coffee I bye is roasted. But I am thinking of changing this...It will be difficult for me, becаuse here/in Bulgaria/ we drink more robusta.

I've got a Ugandan that is pretty flat for the first 3-4 days off of roast. By day 5 it's getting good and from day 6 to about day 14 watch out! It's like a completely different coffee once it has been properly rested. Goes from flat and uninteresting to deep and complex as it ages up to a point.
