I'm wondering what coffee cup sizes any of you guys have in-store versus take-out. If you advertise on your menu for S(12), M(16), L(20) for the take-out, what do you serve for your in-store so that a customer doesn't get pissed that you're not serving them exactly 12 oz, 16 oz or 20 oz, etc.? Thoughts? Do you just offer two in-house sizes?

For our standard menu we do Small, Medium, and Large to-go and Small or Medium ceramic. The sizes are 12, 16, and 20. Fortunately, we found 16oz bowls and 12oz mugs, so there is no size difference. The traditional menu is for here only, and uses 4oz and 6oz ceramic. I've been looking (sort of) for a 12oz latte bowl, cause I don't really like serving the small for here latte in a coffee mug. It works, but...

Keep in mind this was intended to be a high-quality but not terribly progressive approach. A neighborhood place, where people used to getting stuff from starbies wouldn't feel ostracized - we just wanted to be welcoming and friendly and tasty. Another approach would be warranted in another area/concept. I happen to like the all doubles, one size per drink, model myself, but would price accordingly if there was a volume discrepancy between here and to-go.
We have 10, 16, and 20 oz. to go and in our sit-down cafe section we only offer one size in a ceramic cup, about 16oz, for about $1.00 more than the to go 16oz, but it is full-service and includes at least one refill. We use big/jumbo cups, so customers love it. It's unique and they feel like they're getting a "bowl" of coffee. Hope this helps!
Non-traditional espresso beverages (ie lattes versus shot, mach', cap etc.) and pour-over bar to order coffee is S=8 M=12 L=16, porcelain or ToGo same sizes. Both lattes and coffee same white porcelain cup and saucer, not mug. They aren't that hard to find:-)

FWIW traditional espresso beverages Nero Black ACF.
I use the Nero Black! ordering some of the green tulip 3oz now also cause the green is cool.
I offer a traditional menu for here service using 7oz for cappuccino, 10oz latte, 3oz macchiato, and double spros.
our to go menu only offers 12oz, but if its an old customer who is used to drinking big gulps we hide the 16oz and 20oz cups under the table and charge $1 more for serving them 42 grams of spro and 13oz of milk.
we have 8, 16, 20oz paper to go, 3, 6, 8, or 16 to stay, the 20 is on it's way out though. how does everyone else feel about the super size?
Just out of curiosity, where do you order your for-here cups from?

we're in a more "grab your coffee and go" community, so we've gone with the 12, 16, 20oz. We go with an old fashioned Fiesta mug & tea cup. It costs a little more, but it's worth it for the style points.
8oz and 12oz cups to go - medium sizes aren't common here - and for have-ins we have 2oz, 3oz, 6oz, 7oz for our regular, depending on the drink, and 8oz for large.
we serve 12 oz and 16 oz to go, and for bar drinks we have 2 oz, 6 oz, 8 oz and 12 oz. for drip coffee we have a vast assortment of kitschy mugs (that range in shape and size). we also have pint glasses.

we don't really do the whole 20 oz large. i think it's just too much.
12 and 16 hot both ceramic to stay and paper to go.

6 oz capp stay, 8 oz to go-- but it's discouraged.

macchiatto, espresso, in house only.. demitasse.
I know that Intelligentsia does 12, 16, 20 for take-out. Does anyone know what they do for stay-in? And, does anyone know what Stumptown or any of the other more established independents are doing?
