Denver-

Avaino Coffee- 955 Lincoln St (Uses Intelli)

Fluid Coffee- 501 E 19th Ave (Uses Novo- big Clover Selection)

Both are right downtown. I recommend you check if the Rockies are playing too. Their games are cheap to attend and lots of fun. Plus tons of great restaurants in the LODO area by the stadium.

Kentucky...go to a bourbon distillery (no not that bourbon). Even if you don't like whiskey it is still a good time. Woodford reserve was my favorite.

Any amazingly fun things to do on the way?
Get thee to Boulder, CO and Ozo Coffee: 5340 Arapahoe Ave
Boulder, CO 80303 and while in the Loveland, CO area, drive up the road to Rocky Mountain National Park. It's not too far. Eat breakfast at a little dive called Meadow Mountain Cafe in Allenspark, CO (on the road between Estes Park and the highway down to Boulder.

Also...

If your route from Mesa Verde is over Highway 70, then ignore, but if you're coming up 25 through CO. Springs, stop by Pikes Peak and Garden of the Gods. Amazing. Good breakfast at Adams Mountain Cafe in Manitou Springs, adjacent to Garden of the Gods.
