I Love and hate where I'm located and currently working. I'm from the Bay Area, but now live in a much smaller town with a lacking Barista community. The coffee House I work at is behind, yet catching up and I'm moving right a long with it. I would love to move to a strong community in an awesome city soon. but I'm here and competing and reaching out and meeting some amazing people

Chemex; Iced coffee

So I've been meaning to get myself a yama brewer, but $200 is just a bit out of reach these days so I wanted to try something different.  I took my chemex 6 cup with a paper filter, 25 grams to 400 grams water (I usually dose 28 but wanted to mess with it). Pre-wet the filter then put it into a bucket full of ice and let it cool down instead of pre-heat.  poured the water with 195-197 degrees.  Let it settle and cool down to ice cold for about 30 minutes and served it.  It was delicious!! … Continue

the best technique for double rosettas?

I can pour two. but the first one looks half-way sloppy and the second one is very sloppy. Does anyone have any thoughts on this? Bryan.

Hey Bryan! I think I saw part of your competition on the stream; in fact, I know I did because I got excited. Then I think my internet crapped out. I judged the SERBC this time around, and I'm headed to Manhattan for the NERBC in April, too. I'm also trying to swing getting to the USBC, but that's pretty ify with graduate school (I started grad school in Memphis, TN, for sculpture).
