So, Evoke is interested in serving Chai Tea and Chai Tea Lattes using premium loose leaf chai. I know there are several cafes around that are using loose leaf chai even in their lattes.

We have tried several but cannot get it to steep well in the milk.

Any suggestions?

Maya Tea Company has a good one that I've used. You take the loose leaf tea, water, a little honey, and brown sugar (to taste) and bring to a boil, simmer for 10 min. and strain. We always made it concentrate so it's even amounts of milk and tea. It lasts for about a week in the frig. I'm not sure if it's on there web site, but give them and call and they'll send you some samples to brew up.
