Portafilter Double Spout Problems - any suggestions?

So, we have not had any problems with our portafilters on any of our Nuova Simonelli espresso machines in the past but we just bought 2 new machines and the trouble began.



When we put the double spouts on each portafilter, they turn past center and end up being sideways (shot classes would be front and back and not side to side).



Before I tell you what I have tried, do you have any suggestions? It is about to drive me mad.

IASC Certification

I have been seeing this since we have been going to Coffee Fest 4 years ago and I was thinking about 'getting certified' in September. I do not know much about it, however, and wanted your thoughts..



1. Is it worth it?

2. What is expected?

3. Other thoughts?



It seems that every certification you can get is just more education so it seems that it would be worth at least giving it a go but I don't want to waste $89.00 for nothing!

Super-Automatic Espresso Machines

Frozen Coffee Drinks and Smoothies

I have been trying to avoid this for a long time but the day has come. We need a blender and we need to get set up with frozen drink mixes. When we were in Bozeman, we pretty much could get away with Italian Soda and iced coffee drinks. Here in Oklahoma, not so much.

Loose Leaf Chai - We need your help!

So, Evoke is interested in serving Chai Tea and Chai Tea Lattes using
premium loose leaf chai. I know there are several cafes around that are
using loose leaf chai even in their lattes.

We have tried several but cannot get it to steep well in the milk.

Any suggestions?
