The farmers are all small-holders. They process their harvest themselves. The harvest season starts November and ends February. Only ripe cherries are picked, brought to washing stations for washing, and pulped using these very basic machines. (Vastly different from Latin America), within 8 hours of harvest, before soaking for 24 hrs for fermentation.
