I am planning to start a roasting business in California. I am debating whether to build my own roaster or buy a professional one, but I don't know what the regulations are for roasting. Can I sell coffee that was roasted in a home-made roaster in CA? Does anyone know about this?

Most people are allowed to sell coffee that they have roasted on roasters that they have designed and built themselves, but you MAY have inspections to make sure it is up to health and safety codes although I doubt it. Where ever you are having your metal work done should know what kinds of metal you can use to meet inspection requirements. You will also have to make sure you are meeting the air quality requirements in your area. As long as you are paying attention to these aspects of your roaster you should be fine.
