I've heard a few people on here and other places recommend using rice to clean the residues from your grinder, and that idea intrigues me.  (We use dual Mazzer Super Jolly Timers, just in case anyone is curious.)

So: 

1)  What do you use to clean your grinders, and why?

2)  How often do you clean them?

I use a brush and vacuum cleaner for grinder cleaning. Grindz, rice and others will work fine I'm sure, but I like the simple, cheap approach and it works for me. If you have access to compressed air it works quite well also.

I strip all grinders before using each new batch of beans, which for us is every 2-3 weeks. This involves removing the burrs and giving everything a good cleaning. Later!
I'm with Shadow, I never heard of using chems or rice before I entered the technician field. Coffee is dirty in nature. All your trying to accomplish is to keep buildup down. When I worked in a shop I cleaned my espresso grinders once a week.
