What is your policy/procedure if you have an employee that leaves your business for the summer and wants to come back in the fall when school starts up again. This is based upon the employee leaving on good terms?

If it's a good employee I say go for it. I don't like hiring seasonal, but if you've got someone who knows your business, customers and is good behind give them some shifts.
The employees reason for leaving, how they left, and their overall success as an employee should be the priority factors.

If you have the shifts available, and this will not disrupt other employees think of this as hiring a new person who required little or no training.

Do not think of this as an issue of loyalty or abandonment - if it is not. Take the view of what is best for the business and who is best to operate it.
Thanks for the feedback. Sometimes you just need a little reinforcement to know that your line of thinking is correct.
Good baristas are hard to come by. I would build loyalty in them by allowing them to come back, that is, if you have room. Plus, your customers, hopefully, would be glad to have them back, and that's what counts.
For me, it depends on why they left. It's obvious that they are not long term employees, they've already proved that to you once. I've had staff leave for a "substantially higher paying offer" only to come back in a few weeks begging for a job, "this was the best job I ever had & I blew it". I can't do it as I know it will only happen again if another 'great' offer comes along. Good luck
