I am such a fan of this gentlemen. If anyone can remember and would like to share, Mr. Wilson used a food safe chemical two NWWBC competitions ago to create a caviar type ball of espresso. Does anybody remember the name of that chemical and maybe know where I can get some.

According to a friend of mine (which is a chef) you can use a combination of sodium alginate and calcium chloride. I'll send you the details in an email if you like.

I think that was before video streams of competitions became the norm a'la Zachary. Lots of pics floating around, though.
He does but as i am not from the US i don't think that supplier wil be of great help to you. On the other hand i found a great link on how to get it. It's shows an explanation depending on the amount of liquid nitrogen you need.

Here is a video ... not the best quality, or too close, but still cool. I was lucky enough to judge both of Billy's preliminary and final rounds and taste this drink first hand. It was truly awesome, and creative. There is also a lot of footage from this event on the Training with Champions DVD that I directed and Bellissimo produced.

Willpowder.net sells everything you need for spherification. They are in new York and shipping takes about a week (fedex ground) just got mine for the scrbc...it's awesome stuff. Have fun!
