Thanks very much, Jason. I really appreciate you taking the time to help. I have another bag here from the same batch. I'll pull a few shots this evening and see where it is. I sent some to Mike and the guys at Cuvee and they gave a very similar review. Good sweetness, underdeveloped body and complexity, and an off-flavor in the finish. But, as you say, it does seem to take a long while to ripen. Maybe next time I'll hold on to it for a couple of weeks and then send it out. Thanks again.

Sweeeet. I'm want to go on so many exchanges. I might have to post pone that because of training for competition and what not, but meh. When I'm in town, you'll have to show me all THE shops in the area, yo. haha
