I was checking out your photos and noticed you have a La Marzocco Swift grinder and figured I would wish you luck. Anyway....

I love it for all the same reasons you do Gin li.
Also because the coffee has great clarity.
Because everybody that walks in and sees it in the roastery says "WoW!"
Because its super reiable and nothing ever goes wrong with it.
I love it because it makes me think about making coffee.
I love it because it makes me feel like having a coffee even when i have had too many.

Gin Li, your cafe seems awesome. My roommate is a Beijinger and believes Beijing is better than any other place in China. I will make sure to notify him that it isn't because the Mango Cafe is in Yunlin, Taiwan, not Beijing... This will undoubtably make him angry :-) Keep up the good work.

Nice to meet you too! I was looking at some of the photos of your cafe on Flickr and it looks like you offer Syphon to your customers? What is your technique? I also see the pour-over drip water pot. I have wanted to practice different drip techniques as well, but it has been difficult to find a water pot with a thin spout like that. In one of the pictures, you are making drip coffee: Is that a light below the carafe? Very nice!
