In regard to Red Eye: I'm really looking forward to it. There's so much I have left to learn about coffee even after several years working the espresso machine and I think Red Eye will serve as an educational outlet [seed to cup awareness] to the Athens community.
Furthermore, I was happy to read the comment below. I ordered a Chemex for myself recently to see if it lived up to all the hype about it. First, I brewed some of the 1000Faces Semi-Forest Sidamo. This weeks batch seemed a little darker than last weeks. (Beside the point.)
The point is that after trying your beans on the Chemex I was impressed by the brewing quality and ability of this little machine. It produced an incredibly clean cup. However, I think that this particular batch of beans tasted better when brewed in a Bodum French press. SO, this leads me to postulate that in at least some of my favorite coffees, probably the "earthier" ones, the French press is more suited to my tastes.
I brought some "medium roast" beans home from OK- Colombia Supremo.
This varietal contains a lot of bright qualities which really came through in the Chemex. In the Bodum, it seems a little murky. This supports my supposition I mentioned above.
All this long winded comment to say: YES! It is good to meet other coffee people in town. I look forward to swapping tid bits with you.
