Here it comes to another example of definitions for espresso drinks.

Should we find the sourse of its origin or the best tastes of its existance? Should we following the tradition or set up a system of great coffee drinks, for the generations behind us?

It sounds like setting up a new world? Maybe yes, maybe not. But, finally, what to do with it?

What my question come to why it was created? It was because the average quality of espresso in Italy was not perfect all the times, and some people do not like to bear those bad tastes, even if they were not too strong. So, they put some suger or some milk or milk foam to "remove" them, so that they can enjoy it. It cannot be adjusted to suite every one, but definitey for someone. A dollop of milk foam is more or less 1 to 1 in ratio, that is s soup spoon if milk foam.

Another example is that most Italians enjoy their caffe with "suger", not like those "foreigners", who never put suger. It has the similar effects.

What is the principle behind? Tastes, tastes, tastes! But, not understood in a very simple way!
