Just wondering how other cafes run. How many baristas do you have per manager? I am the only owner and am up to 11 employees spread across a 24 hour work day.

What works best for your cafe?

Well, I've had two locations with 15 staff and only myself as the "manager".  But really it depends on you, the work load and whether or not you can afford a "manager" - not to mention finding someone responsible and trustworthy.

At the cafe where I work, we have three locations, each with its own manager, and something in the range of 50-55 employees who split between all three stores.

At the last place I worked there was one manager for two stores and about 15 employees, with three or four being "supervisors", just so newer employees would know who was in charge.
