Trying to project # of customers based on traffic??

Hi again;

Thanks for the help Matt!

Based on foot traffic of 750,000 per year (all ages--ferry terminal)---what would be a realistic "capture percenatage"?

we will be selling specialty coffees, hot chocolate,as well as desert items and sandwiches

1% capture on daily traffic is about what you should build a business plan based off of. A great shop does more than that but 750,000 a year means 20 people a day. There are other factors to consider but 1% is a good start. I'd love to hear what people are doing, and how they are getting to their numbers.
