I did a pretty intense syrup tasting about 2 years ago and the results were amazing, top three in order were;

1. Sanoma Syrups - boutique syrup developer out of California, worth getting samples!
2. Monin
3. Davinci

We use monin, they all kind of suck. I haven't had Sanoma though.

I use Fontana. I am happy with them, but wish they had more flavors. For "seasonal" stuff, I usually use Monin. I like the "1883" brand, but have a very hard time getting it.

We're using 1883. Monin has ALOT of syrups...I used to make sauces with them. I need to check out Sanoma now.

I'm not sure that syrups should still have a home in a good coffee shop but why not just make them yourself. You could offer a few regular offerings and a seasonal one. Or opt for just vanilla and a chocolate sauce.

Natural flavorings and sugars are necessary. I my opinion, good quality syrups are a must in any retail specialty coffee setting. If you do not offer these types of drinks you are leaving money on the table...

Monin and Torani are the best hands down.

Coffee & Tea Journal recently did a taste test article on syrups, see article here.

Their conclusions weren't so much that one was better than the other, rather that they had different nuances that lent themselves to different uses. I have to admit that it's been awhile since I've actually had any kind of syrup in a drink, but I have visited Monin's operations in FL and was impressed; and they use no HFCS.
