Howdy!

So, 2006 La Marzocco FB80, 3 group. The Hot water Dispense button is dispensing

luke warm water. I adjusted the valve that controls steam and hot water however, it's 

still not hot. Steam wands are working fine so what to check next?

There are two valves that control the water temp, a hot water valve that takes water directly from the boiler, and a cold water mix valve that introduces cold water to the hot water coming from the boiler before it gets to the outlet.  What you're probably seeing is scale build up inside the hot water valve, thereby not allowing any of the super hot water from the boiler to mix with the cold water from the mix valve.  There isn't much to be done besides take the hot water valve apart and clean it out or replace it.  This would also be a good time to check for scale in the boiler.  7 years of uninterupted service is a likely candidate for some scale related issues in a couple different parts of the machine.  Do you have a Tech company that you generally use?  It might be time to give them a call.
