I am looking for any information on the Health Department rules for espresso carts and daily  required trips to a commissary.  I would welcome feedback from anybody in the LA area .

I hate to sound like a smart a$$, but a simple phone call should answer most of your major questions, and you should be able to get the office to send you a copy of the actual regulations (the book here in NY State is around 100 pages.

The more specific the questions, the easier it is to get good answers.

BTW, when I started up, my initial question was "what do I need to do to get my permit?". This resulted in a health dept inspector setting up an appointment to help guide me. He spent over 2 hours reviewing what I needed to do, and what I didn't need to do. He was extremely helpful, and has continued to be helpful during my annual inspections.
