Hi guys,

 

I'm a barista from Auckland New Zealand and I'm competing in this years regionals, and I need some ideas for signature drinks?

 

things I'm considering using are the following

 

* showcasing a single origin that is process to different ways, much like michael philips.

* using a kenyan coffee and doing something with lemons and limes.

* using a sidama guji and do something with fruit reduction.

 

I would much appreciate any input that you guys may have.

One thing I would suggest is not getting your heart set on an ingredient (like a fruit reduction) before you know the flavor(s) of your espresso. I've seen this approach hinder barista's creativity. 
I should add, if you are thinking of using fruit stuffs, look into gelatin clarification. Relatively simple, with good results.
