Do any of you maximize on Fair Trade, Bird Friendly and Rain Forrest Alliance certified coffees if so does there seem to be a demand by the your clients? And if so what do you see as the real benefits and how do you sell customers on the Idea.

We're doing our best to get our coffee Fair Trade/Organic certified, but the labels seem to be generally unimportant to the customer. If it's a good cafe that serves good coffee, I find the customer generally understands that the green buyer purchases coffee at a fair price and if necessary, we educate the customer on the idea that organic certification (for example) takes several years to get and a lot of money. That being said, most coffees purchased by medium/smaller roasters tend to be fair trade and organic without the actual certificate.
So... no huge demand, though it will attract a customer to one of our coffees over another...
