Finally working on opening up a new shop to supplment my mobile business. On top of Coffee & the good stuff, we will also have food this time. Mainly sandwiches, you know the usual coffee shop stuff. But I do plan on picking up a decent countertop convection oven to do desserts, pastries, & to offer some baked pasta specials, the occassional pizza special, maybe baked potatoes. Does anyone have any suggestions on a decent countertop convection oven (110V electric, no gas) that would go good in a not to high volume shop (although hopefully high volume!) I know everything on the coffee side of things & I know all about food & restaurant equipment but I've never had to look into an oven in the past so Im lost on brands, or styles, or anything. Any help would be appreciated.

If you're thinking of one of those half-sized, quarter sheet ovens, then you might want to re-think you're approach. Those can be nice but they're just not designed to handle volume and if your volume increases, you're hosed.

Look into the 4 sheet tray convection ovens, like those by Sodir, they can handle a good amount of capacity and offer better quality build and better temperature stability.
