Our coffee shops currently use chocolate milk for all hot chocolate and mocha drinks. Unfortunately there is only 1 brand of chocolate milk that we can use because the other ones separate when steamed. I have tried Monin dark chocolate sauce but it doesn't compare in taste. What brands would any of you recommend? Thanks

i've use Guittard and Ghirardelli chocolate sauces and they are really good

I am with Eugene - I use Ghirardelli Dark Sauce exclusively - my customers love it! Personally, I think the milk chocolate is too sweet.

Buy Guittard chocolate in those big 50lb drums and make your own recipe. Best advice I ever received on chocolate. Saves us a ton of money and we get to control the recipes. We have six different chocolate blends in house now between our kitchen and our cafe:
-Mocha Standard
-Mocha Sweet
-Hot Chocolate
-Smoothie Base

And then the two that the kitchen uses that I honestly have no idea about, haha.

IMO the Guittard pumps absolutely suck beyond all words. I have no idea why they haven't changed the design. Like I said, we don't use the pre-mixed kind, and mix our own instead, putting them into squeeze bottles.
