I'm in the processing of opening my shop and am choosing chocolate options for Mochas.  I'd like something that is intense but not too sweet.  I will be restricting milk-based drinks to 8 and 12oz sizes, so I want the chocolate to be reflective of that choice (e.g. high quality but smaller portions).

Beside the standard liquid sauces, I was interested in trying solid chocolates.  Someone suggested Felchlin Swiss but there are so many to choose from I wasn't sure where to start.

I would try to make your own.  Ours has received rave reviews and is much cheaper than purchasing (approximately $3 per gallon COGs).  We also only offer it in 8 and 12 ounce sizes, FWIW.

Seriously $3 per gallon choco sauce? I've been making ours for years and an 84oz batch just the 2lb natural cocoa I use costs $15 plus cost of the 2.5lb cane sugar and 1/4c vanilla extract and 1/4t sea salt...

We use pure ground chocolate, roughly 80 percent cocoa...we sweeten it on request but offer it bittersweet as a standard. It melts nicely when steamed with the milk and is less fussy than making a syrup, and is definitely tastier than any manufactured syrups/powders I've tried!
