Im In the process of building my first coffee trailer,  i have been in espresso service for a few years doing basic repairs and rebuilds and now i have decided to move into retail,   we have a very untapped market here for coffee with only one other mobile coffee truck in the area thats not licensed and cant do anything in city limits.  

My day job is an industrial electrician and hvac apprentice.    I have acquired a very tired old ek from a local roaster in payment for other work.  

Picking up an astoria lever in propane and have cleaned up an older newco airpot machine for doing basic drip.

Question is coming from someone that has never used an ek,  would it sufice as my only grinder,  i understand that once dialed in properly that some shops doing drip and espresso grind on them.
