Mine, the classic Marzocco GS paddle group, PID'd of course!
Would love to have either a Quick Mill Anita which is a HX model or the Alexia with the PID option. But then there's the Salvatore Black One.
I am very happy with my 3 group Rapallo lever...all our future cafes are going to be lever machines...but would like a 4 group. I would also be real keen to try some of the older levers such as the classic Contis as mentioned.
Did anyone see that triple boiler LM GS-1 for sale on both this forum and Craigslist Seattle? That thing is beyond cool! Maybe its owner can chime in?? :)
I luckily have my dream machine! It's so classy and rocks The Shops socks off! I made a minor modification, replaced 1 steam wand with a Mirage wand for smoother milk texture. Each grouphead has its own heat restricter so I can lower/raise temp for a guest espresso or single origin shots. I have had the pleasure to work on 2 and 3 group Mirage lever machines, no Speedster yet! The thing I miss most about working on a Mirage is the foot pedal, love it!!miss it!!
