<p>I have to agree with Dustin on this. Its sad but rarely do people order straight espresso shots and take the time to taste it right. If you're trying to put yourself in your customers shoes I'd do what Dustin does, toss the sucker back. But hold it in your mouth for a bit because as a trained barista you'll be able to distinguish the good and the bad fairly quickly.</p>

<p>Ya, I forgot to add that is swish it in my mouth 3 times, gargle it and then swallow.(thats what she said:)</p>
<p>But seriously I drink espresso all the time and dont have a certain way i drink it, I just try and enjoy it without thinking to much. I over think everything before I actually have the shot(grind, temp, tamp, dose, etc), so once its made and the taste is to my liking (not a sink shot) then i just sip til gone.<br></br> <br></br> <cite>Val Casey said:…</cite></p>

Also, with any coffee, after the initial taste and either spit or swallow, I like to breathe back into my closed mouth. This provides that secondary taste experience that helps bring back flavors and lingers there for awhile.
