I Would really like to learn how to roast coffee, and would like to go to Italy, or any other place on earth that can teach me properly.

Yeah, I know you bought a fluid-air roaster, but you could always pick up one of those little iRoast units. I have heard they work fairly well, and will help you learn the nuances of the process. Also, homeroaster.com has some neat stuff. (I have a used iRoast I'd sell for $100.)
