IM a small independent roaster and I would like to buy an espresso machine for farmers markets. This machine would need to run on gas and invertor battery at times as sometimes there is no external power.

I am having a lot of conflicting advice about machines. Some say I have to buy a Mazarocoo or La Spaziale for quality but when I went to a dealer he recommended a sega or Cima single boiler machine that could be set to semi automatic and automatic. Ive read that i should be looking for a dual boil to keep the temperature steady so I am nervous of his advice. Ive looked up lever machine but they seem to require a lot of practice and skills.

Any advice anyone?

I researched this issue for months and had the same concerns.  I currently run a propane powered machine during weekend markets with no regrets. It pulls quality shots consistently, and customers love it. Few hours to learn and once comfortable, timing becomes another basic step in your process of dialing in shots.

End of the day, you are looking for a solution that will enable you to pull shot in a remote location, without access to power. Comparing a piston lever to the plethora of options you have with an indoor cafe scenario is apples and oranges.

However, the one issue you will need to asses is managing the manual water fills. This will be dependent on the number of customers serviced in a day and the machine specs. Also factors like ambient temp and the temp of the fill water, delays could be 5-15 min.  There are also some things you can to to mitigate and improve temp recovery times. Plus it gives you time to make conversation with customers...

I have come to the same conclusion I am about to buy a cima machine with a gas convertor fitted and use a 2 kw generator for the pump and grinder although I could use an invertor battery it seems less reliable than a generator. I am going to test the noise level on the generator next week. but yes, planning ahead to work at locations with no power has been challenging. I am very interested to hear that you are happy with the machine when it runs on gas. That's great news!

I run a 2kw generator about 50ft away.  You can still hear it kick on when I run the grinder but its not so loud that it impacts conversation or the overall customer experience.
