Hard Work for Hard Times

So I am currently working at a shop I started out at in January of 2009. I left in March of 2009 to go work with another shop, Cafe:ine, which I value very much. Honey Coffee

Pan roasted some honey coffee from Panama this morning.
Anyone know much about this new "honey" processing? It creates quite the sweet and rounded cup thus far, even from last year's crop.
