Does anyone know if it is possible, and if so - how difficult, to switch a roaster (such as a Ambex YM-2) from Natrual Gas to Propane? Know of one for sale that is Natural and would like to have it be a bit more mobile until a permanent location could be set up.
Any thoughts on this - even pros or cons for either Natural or LP?

It can be done, several things need changed.
Propane operates at a higher pressure, because it has a different specific gravity it requires a change in the burner and or orifices that control gas flow into the burner manifold depending on a atmospheric or power burner.
If you have a powered burner an airflow kit or an adjustment is required as well. It may require a new gas valve if the one on the roaster is designed only for natural gas, generally most valves can be changed over with a spring kit from the manufacturer.

Propane and natural gas are very different and it is dangerous just to hook propane to a burner that is set up for NG. Be careful what you do and who you have do it... you are playing with something that can go BOOM!!!
Contact Ambex and they'll tell you exactly what's needed to do the conversion.

Update:

Talked to Ambex at Coffee Fest and it's no problem to change from Natural Gas to Propane Gas - they have a kit, they just need to know the model and number of burners and they will set you up.
