My original title was that i dont like coffee, but that felt like a lie.

I love coffee. I love working with it, reading about it, studying origin but i just cant sit and drink it. Ive been a barista for, altogether, over a year.

Im serious about becoming a great barista, and am on my way. My goal in the next few months is to really develop my palate.

Today I made myself a macchiato and the first drink I gagged. Not because it was a bad macchiato, but my stomach just gets repulsed.

I can sample our brewed coffee and the shots that I pull when I dial in in the morning, but i always spit it out.

Im willing to recognize this problem and am trying to solve it.

Are there any tips on developing a keen palate?

I would say experiment with as many brewing methods and as many coffees as you can get your hands on. Try to narrow down exactly what you do not enjoy about it. If you do find that you appreciate certain traits, go for coffees that exhibit those traits. Same goes for brewing methods. If you find for example that you prefer a lighter bodied coffee, avoid french pressing an Indonesian, etc.

I hated coffee when I became a barista. I started with the crazy milk and sugar based espresso drinks, slowly taking the sweetness and milkiness away. After about 3 months, I was taking shots straight and loving it. just an idea.

Speaking of what Brian said, the drink that introduced me to smaller espresso-forward drinks was a "caramel con panna". Caramel in the espresso and on top of the whipped cream.

You can't really jump strait into drinking espresso. Ease yourself into it by drinking cream and/or sugar in your coffee. Try a traditional cappuccino instead of the macchiato. Gradually decrease the milk & sugar. Or don't if you prefer.

I agree with Ricky Sutton and Brian. I sometimes look back on my introduction to espresso and I started with a white chocolate mocha. You could hardly taste the espresso, but over time I started shedding the sweets and milk. good luck and happy tastings.

Start with drinking french presses. Their the best and you truly taste the full body of the coffee unlike the drip. It is what got me to drink it black.

Hey Cody - Good suggestions from all. Also, maybe making a great capp for your boss every morning would help.
Oh wait, that would help me instead! :)
