hi guys,ill be joining a barista cup,and its my first time to join this competition. i just want to ask some tips and advice guys. if possible i really need to win this. ive been waiting for this since a became a barista. maybe you can also suggest some drinks that i can use as my personal concoction. the competition mechanics is to make a perfect cup of espresso.cappuccino and personal concoction.

because it is summer, i would suggest maybe a nice iced drink.
One of my favorite things to make is a iced mocha in a martini shaker. The best way i've found to do this to get a nice rich mocha taste is to first stir together espresso, a small spoonful of sweetened condensed milk, and cocoa powder (i prefer dutch processed cocoa) in the bottom of the martini shaker. Then add ice and shake.

Pour over a cup full of ice and add a splash of milk to the cup (just enough to give it swirls of milk to look nice, as well as dilute the overly rich mocha concentrate you just made) Another thing to make it look nicer would be to drizzle chocolate syrup along the sides of the cup before you add the ice and coffee. this makes distinct dark lines in the final cup, and looks and tastes great. in the end, it should look something like this: http://1.bp.blogspot.com/_5Pm7EV4ZhXE/R9_-8MiD-VI/AAAAAAAAAsA/woZYP... (minus whipped cream)
This makes enough for one 12 oz iced mocha, there are larger martini shakers out there though and i'm sure you could get the same result.

You can make this recipe your own by experimenting with different cocoa powders/espresso to get the flavor you want. Another thing to experiment with is to try steaming milk to 100 degress, then scrape the micro foam off the top of the milk and add it to the top of your drink. This creates a sensation of cold microfoam that really adds to the iced drink (this technique was covered in another forum on bx with some controversy, but it i do it all the time now, and its awesome)

Hey Bud. The most important thing to remember about your presentation is to speak about your coffee. Regarding your speciality drink, just make sure that your espresso is the most promonent taste and the rest is up to you. On the technical side, you should get your hands on a score sheet and practice with it. Technical scores arent the bulk of your points but if you get it right then your sensory scores will follow.
